Almond Butter Pancakes

Our recipe is a go to for healthy breakfast or brunch on a slow weekend morning (or any morning). You can easily add dark chocolate chips, blueberries or any of your go to pancake mix-ins. Get creative!

2 large eggs

2 bananas mashed

½ cup almond butter

½ teaspoon ground cinnamon

½ teaspoon vanilla extract

Pinch salt

1 cup almond meal or almond flour

½ teaspoon baking powder

Cooking spray

1) Combine first 6 ingredients in a bowl. Stir with a whisk. Add in almond meal and baking powder. Stir to combine.

2) Heat a skillet over medium heat. Coat with cooking spray. Scoop batter into skillet in a ¼ cup measuring cup. Cook 1-2 minutes per side or until lightly browned and bubbly. Repeat with remaining batter.

Yield: 8-10 pancakes
